Recipe: Corey and Ellen's Protein Bars

1/4 cup peanut or almond butter (unsalted is best, but whatever you prefer)

5 Tbsp. warm water

1 generous Tbsp. unsweetened baking cocoa*

1 Tbsp. honey*

About 4 scoops chocolate whey protein powder

In medium bowl, mix thoroughly: nut butter, water, baking cocoa and honey. When it is evenly mixed, add 3 ½ scoops protein powder and stir/knead with your hands, adding the last ½ scoop of protein powder if it doesn’t make it dry, until you have a substance about the consistency of Playdough. Roll this out on a cutting board (plastic works best instead of a wooden board) and slice the roll into pieces of desired thickness. Place in the fridge to cool and become more firm.

*Protein powders vary in their sweetness and flavoring. We actually use an unsweetened, unflavored variety at our house. You will need to do some experimenting to learn just how much honey and baking cocoa to add to your particular protein powder. Of course, the less honey added, the healthier!
