Ingredients:
1 pound lentils, rinsed and drained
1 cup diced celery
1 cup diced onion
1 cup diced carrots
2 cloves garlic, coarsely chopped
12 oz. smoked sausage (preferably from wild game)
6 cups chicken broth
2 cans (14.5 oz. each) diced tomatoes, undrained
2 cups chopped fresh spinach or chard
Juice of one lemon (about 2 tbsp.)
¼ tsp. ground black pepper
1 tbsp. chopped fresh parsley
Salt to taste (optional)
Preparation:
Combine all ingredients, except salt, in a 5 – 7 quart slow cooker (Crock Pot). Cover and cook on LOW for 6 to 8 hours, until lentils are tender. Season to taste, if desired, with salt.
