Ingredients:
2 large heads Romaine lettuce, washed and dried
½ pound jicama, peeled and sliced into bite-sized pieces
Dressing:
¾ cup olive oil
¼ cup lime juice
1 – 2 Tbsp sugar (less is best!)
¼ tsp ground ginger
Pinch cayenne
Salt and pepper to taste
Preparation:
Tear lettuce into small pieces and place in salad bowl or on small plates. Top with jicama.
Make dressing by combining all ingredients together in a jar and shake vigorously, or whisk together in a small bowl. Pour over greens; toss well.
