• 1.5 oz. white rum
• Sprig of fresh mint
• Tsp. Grenadine (If you want to keep things natural, Grenadine can be created by simmering pomegranate juice for 15 minutes on the stove, then adding superfine sugar to create a syrupy consistency)
• Pomegranate seeds
• 6 oz. Club Soda
In a cocktail shaker, muddle mint and pomegranate seeds with white rum and Grenadine. Add club soda and stir (don’t shake). Pour over ice in a tumbler (or a goblet if you’re fancy) and garnish with a fresh, unmuddled sprig of mint.
To make an alcohol-free version, replace the rum with more club soda or lemon-lime soda.
