Kanani’s Favorite Soup: Healthy Recipe provided by Ellen Pavitt

Preparation:

In a pot with about 8 cups of water, boil 1 cup of red lentils and 1 cup of split green peas with 1 tsp. thyme, a few cloves of crushed garlic, ½ tsp. pepper and 3 bay leaves – after mixture comes to a boil, reduce to simmer and cook about one hour.

Add chopped potatoes, carrots, onions and celery – maybe a total of about 6 cups of veggies all together (really just however much you prefer) and simmer another 30 minutes or so, until the veggies are cooked through.

After adding the veggies you may want to add additional water before you simmer it – depends on the consistency you want  for the soup.

Serve over rice in individual bowls – top with grated Cheddar cheese. Each person can add Soy Sauce to their own serving.
