Services: Formerly Drew's Corner, Salmon Creek Lunch Express is located at the Vocational Training and Resource Center. The restaurant is open between 11 a.m. to 2 p.m. for lunch. Customers may also place orders over the phone or fax and pick them up. In two weeks, Lunch Express will offer delivery services.

Singh also caters through Salmon Creek Lunch Express. He recently catered the Spring King Salmon Derby award banquet and can prepare food for up to 100 people. Singh said events can be held in their banquet room, which sports a totem pole from Haines and Native artifacts. Because the facility has been blessed by elders, no alcohol can be served there.

"I like to call it a three-star lunch place," Singh said. "It's immaculately clean and there's a very professional atmosphere."

The menu offers burgers, salads, sandwiches and wraps, and Singh makes a special every day from scratch. All vegetables used in food preparation are fresh every morning. Singh aims his services at employees who work in the Lemon Creek area.

Background: Singh is from California and has lived in Juneau for six years. The growing population in California drove him farther and farther north until he found himself in the capital of Alaska.

"I've been in love with it ever since," Singh said. "My family wants me to move back to California, but I can't. I love Alaska so much."

The wilderness and the down-to-earth quality of people lured Singh to Alaska, and he loves to hike and fish. His favorite hike is Mount Jumbo.

"I've done it half a dozen times," Singh said. "The big face of rock reminds me of Yosemite Park."

Singh has been a chef since his arrival in Juneau. He has worked at the Baranof, Goldbelt, Twisted Fish and the Breakwater. Through his experience, he has formed an important network with local restaurant managers.

He decided to relocate to the Lemon Creek area to get away from the busy downtown area.

"But with the catering going on," Singh said, "it's not too quiet these days."
