Food challenge VII- From sea to tree, ground to grill

For Food Challenge VII, we turn to Ernesta Ballard, creator of "Rockfish Mascarpone" and the only chef to submit a recipe for all six Food Challenges so far.

"This challenge recalls the many summer days when we learn that unexpected friends are in town and dropping by after work," Ballard wrote, in her challenge proposal. "We decide to barbecue."

Your recipe must include:

1. An ingredient from the sea.

2. An ingredient from a tree.

3. An ingredient that grows above ground.

4. An ingredient that grows below ground.

It may include anything else you like, but entries will be disqualified if you omit one of the items.

You will earn extra points in judging for using ingredients that can be gathered or caught in the Juneau area. Your recipe must be suitable for barbecue. Everything must be assembled in 20 minutes, pregrill, without any precooking.

The deadline is Friday, July 7, and the best recipes will be printed in an upcoming Food page.

Recipes will be judged on concept and originality, and four finalists will be selected to participate in the FOOD CHALLENGE VII COOKOFF CHAMPIONSHIP, 3:30 p.m. Saturday, July 22, at the Paradise Cafe, 245 Marine Way. Please ensure you are available.

Our panel will rate the dishes based on concept, presentation, ingredients and flavor and select a winner. That champion will be invited to invent the ingredients for Food Challenge VIII.

Deliver a copy of your recipe entry to the Empire's front desk between 9 a.m. and 5 p.m. Monday-Friday, mail to Food Challenge, c/o Juneau Empire, 3100 Channel Drive, Juneau, AK 99801, or e-mail to korry.keeker@juneauempire.com. Include ingredients, directions, your name, address, telephone number, e-mail and, preferably, a photo of your creation.
