RECIPE CHALLENGE:
S.P., of Juneau, responded via e-mail to our "fruit" challenge with a family favorite. S.P. said that this recipe was given to her by her grandma, C.B. (1919-1994) and she thinks it's the best pie ever. Thank you, S.P., for sharing your treasured recipe. Keep those recipes coming!
Strawberry-rhubarb pie
1½ cup sugar,
2 tablespoon quick cooking Tapioca
¼ teaspoon salt
¼ teaspoon nutmeg
¼ teaspoon cinnamon
3 cups rhubarb (cut up)
1 cup strawberries (cut up)
1 tablespoon Oleo
Combine the first seven ingredients together. Mix to coat; let stand 20 minutes. Meanwhile prepare pastry for 9-inch lattice top pie. Line a 9-inch pie plate with pastry. Fill pastry with the fruit mixture and dot with the 1 tablespoon of Oleo. Adjust lattice top, then seal. Bake 350 degrees for 40-45 minutes.
