I.B., of Ketchikan, says, "I modified a marinade recipe into this recipe and it has become one of our favorites. Enjoy."
⅓ cup marmalade
2 tablespoons soy sauce
5 tablespoons lime juice
1 teaspoon grated ginger
2 salmon fillets, about 6-8 ounces each
1. Combine first four ingredients in medium skillet over medium-high heat and bring to a boil.
2. Lower heat to medium and immediately place salmon pieces skin side up in skillet and cover partially.
3. After four or five minutes, flip salmon and cook another four or five minutes, partially covered, until done.
4. Flip salmon right-side up onto plates, drizzle with pan sauce and serve.
Yield: 2 servings.
