JUNEAU - Chez Alaska Cooking School is conducting several classes in October:
Mondays: Carol Young will teach classes on Oct. 5 and 19 about compound butters. Both these classes will be the same, so if you can't make one, be sure to attend the other. You will learn how to add that extra "pizzazz" to all your dishes, whether steaks, pastas or desserts. On Oct. 12, Young will teach "Salsa for it All," a class on preparing many different salsas.
Oct. 23: Friday night Supper Club, held every Friday in October from 6 to 8:30 p.m., will feature Antonio Diaz cooking Peruvian ethnic foods. Cost is $60 for a four-course meal to include two glasses of wine. Club is limited to four tables so each table will participate in a hands-on course and demonstrations for three courses. Class is a minimum of eight people. Sign up by 4 p.m. Oct. 22, so organizers know 1) if the class will "make" and 2) how many to prepare for. Friday night Supper Club will be held on Oct. 30 with a guest chef. Check www.chezalaska.com for details.
Oct. 24: Tom Meyer, from Tom's Pots, will conduct a bread-making class using a cloche - a ceramic bread-baker. Cost is $75 for the three-hour class beginning at 9 a.m.
Oct. 25: In "Smoking Everything," Derrick Snyder will teach about how to smoke many different foods in a "Little Chief" or on the top of your stove. Check online for details.
